I love chicken. I especially love this meal.  It is simple and extremely quick to make.

Because who doesn’t love a meal they can literally prepare in 5 minutes?

Besides being one of the quickest meals to throw together, chicken is one of my favorite meals because it is super healthy and does so much for your body!


This Taco Chicken recipe is quick and easy to make. Perfect for busy nights when you need something quick to put on the dinner table. Low carb, low calorie, and perfect recipe if you are doing keto or trying to lose weight. Made with salsa, chicken, cheese, and spices, this will be a hit!




The Saga of Broken Taco Shells

I found this recipe by accident.

I was planning to make chicken tacos, but when I opened the taco shells, they were all broken!  ( We’ve all been there, right?).  Of course, neither Aaron nor myself wanted to leave to go to the store (we are both pretty lazy), so I decided we were going to have tacos without the shells.  Best decision I ever made!

Okay, maybe not the best, but it’s up there.

We have since made this recipe at least once a week for the past year because it is so quick and we love the taste.  If you have the spices on hand, all you need is chicken, salsa, and cheese.  Sour cream is optional, but we both found it makes it even better.

BTW, I highly recommend to try Organic Valley’s sour cream.  Once you try their sour cream, you will never want to buy the other brands again!  I get nothing out of recommending that brand to you, it is just THAT GOOD.

I can’t say YUM enough on this recipe!




The greatest thing about this meal is it includes chicken. You will find I use chicken in a lot of recipes for its benefits and the fact it is much healthier than other items.  I truly believe that chicken is the Superman of the meat and poultry family.  Experts at Harvard tell me I should eat less red meat and more chicken, and I believe them!

Chicken is loaded with protein, containing all the essential amino acids your body needs (Other meats cannot make this claim!) to help your body remove toxins and building structures in your body, to include muscle, cells, and bone.

Your body craves chicken, so let’s give it what it wants!

Wanting to Make It Better

Picking the right salsa is essential for this recipe because you want something that not only tastes good, but should be made from natural ingredients!  Why?  Because when you eat food without caring about the ingredients, you might end up eating a bunch of chemicals, that actually work against your body and counteract the health benefits this recipe brings!  We don’t want that!

If you make this from scratch, it will have a lot of extra health benefits from the fresh produce.  Unfortunately, I have not mastered homemade salsa yet.  So I still buy the pre-made version from Simple Truth,  which tastes amazing, is super cheap, and has natural ingredients.

However, once I do master it homemade, I will be sure to post it for you.

I make my own taco seasoning in this meal and that is what makes it healthier.  Store bought seasoning usually has a lot of additives and the sodium content is usually very high around 300mg per serving, just by itself!  My taco seasoning is nothing but true dried herbs with no sodium added, which makes this the perfect meal to start cutting back..

Quick and Easy Taco Chicken

This taco chicken is a quick and easy recipe that is perfect for a busy night, but where you can still eat something that is low fat, low carb, and full of vitamins and minerals!





  1. Preheat oven to 375
  2. Combine all seasonings into a separate bowl.  Stir seasonings together until they are mixed well.  Set aside
  3. Trim the fat around the chicken and cut into four equal portions
  4. Use all the seasoning previously set aside to coat chicken evenly
    AARON’S QUICK TIP:  Dump the seasoning and chicken into a large Ziploc bag.  Shake until coated.
  5. Place seasoned chicken into an square non-stick casserole dish
  6. Pour salsa over chicken and spread evenly
  7. Put in oven for 18 minutes
  8. Once timer goes off, take out of oven and sprinkle each chicken breast evenly with the shredded cheese
  9. Put back in oven for about 12-14 minutes
  10. Take out of oven and let sit for about 5 minutes to cool
  11. Add sour cream on each one after cooled (optional)
  12. Enjoy!


Please note oven times may vary.

Portion sizes are large, so feel free to cut chicken even smaller!
