This Immune Boosting Vegetable Soup is something we need more than ever!
With it being so high in Vitamins A and C, it is the perfect winter recipe to keep you cozy and help your immune system at the same time.
Typically, I will meal prep this and eat it for lunch throughout the week.
Can I tell you a secret? On the weeks I do this, I lose a couple of pounds too.
Is it because of the soup itself? I’m not 100% sure. It could be a coincidence.
But even if it is a coincidence, there are no side effects to eating this other than a boost in nutrients, your hunger fulfilled, and a new favorite soup!
Did I mention that it is also vegan friendly?
Antioxidant Rich
For the longest time, I had zero clue what antioxidants were. I would hear this term over and over, in regards to what I should be eating.
I thought it was another health fad, so didn’t pay much attention.
Turns out, this is one of the most important things you can be eating if you want your body to heal and have hope of fighting off illness.
Without getting science-y in my explanation, antioxidants basically work like a phone charger.
When your phone battery gets low and is about to go dead, you put it on the charger, and it refuels the battery, so it can work at optimal performance.
Antioxidants are basically that. Your body is completely made up of cells. When you eat or breathe in toxins (which the Standard American Diet is full of), your cells begin to lose charge and die off.
When you eat things full of antioxidants, they release into your system, with their plugs hanging off and help recharge those dying cells.
So if you have chronic pain or illness, you need a diet rich in antioxidants if you want to have any hope at not getting worse.
There are tons of different antioxidants out there, but did you know Vitamins A & C are two biggies? That tomatoes have lycopene, which is another big one?
So it’s neat that every single ingredient in this soup has a different, powerful antioxidant in it.
I’m so proud right now. I feel like I nailed it.

Side Note: You can make this recipe without the Instant Pot. I just prefer it with it. You would just boil the soup in a large pot for 45-60 minutes until veggies are tender.

Immune Boosting Vegetable Soup

Description
This immune boosting vegetable soup is the best! Made with antioxidant and vegan friendly ingredients, this will be the pick me up you need! Low sodium, low calorie, low fat, and high in fiber, this will be your new favorite healthy meal prep.
Ingredients
2 cups Spinach (or 2.5 oz)
1/2 Red Onion (chopped longways)
2 cups Broccoli (floret)
2 cups Cauliflower (floret)
1 cup Carrots (chopped)
1 cup Celery (chopped)
20 Cherry or Grape Tomatoes (halved)
1 large Red or Orange Bell Pepper (diced)
1 large Zucchini (chopped)
3 cups Green Beans (fresh or frozen)
2 cups Mushrooms (sliced)
1 clove Garlic (minced)
1 tsp Ground Ginger
1 tsp Ground Black Pepper
Instructions
- Once vegetables are washed and cut accordingly, toss all in the Instant Pot.
- Select Soup option, high for 30 minutes
- Turn knob to Sealing
- Once timer goes off, release seal, wait for it to stop releasing steam, and open lid
- Stir until it is pretty well mixed
- Let sit for 5 minutes
- Enjoy!
Notes
You may use fresh or frozen vegetables. I have tried mixtures of both and it seems to taste the same.
If you don’t have an Instant Pot, you can throw everything into a large pot and boil for 45 minutes, or until veggies are softened.
