This Jalapeno Ranch Chicken is crispy on the outside, tender on the inside, with the right amount of flavor.

Ten minutes to prepare night before and 5 minutes to prepare the next day, this is the perfect addition to spice up your dinner on busy days.

You won’t even miss fried chicken.

Aaron and I are on a ranch kick (in case you can’t tell). After making my Homemade Ranch Dressing, it just felt right to save money by using the ingredients we already had to keep making ranch and try different things with it. Why waste food?

Jalapeno Ranch Chicken

Health Benefits!

Jalapenos are great with everything it seems. They add just enough flavor and spice but don’t overpower you. They are also great for their health benefits! Besides providing vitamins and fiber, these spicy things contain Capsaicin. Capsaicin has been shown to boost metabolism, fight cancer, relieve pain, protect against stomach ulcers, and may be good for your heart. More jalapenos? Yes Please!

I recommend to make this with my Homemade Ranch Dressing. It has no added sugar, no added sodium, has no chemicals, and has probiotics. Can the store bought brands say that? Making it homemade is much healthier than store bought and you don’t have the guilt!

Vitamins and Minerals!

Can you believe this recipe (with the ingredients I recommend) has EVERY single major vitamin and mineral in it?

Believe it because it’s true!

Yes, even all the B vitamins.  How’s that for healthy?

Here is what it has the most of:

(% is based on DV of a 2000 calorie diet)

  • 22% Riboflavin (Vitamin B2)
  • 82% Niacin (Vitamin B3)
  • 74% Vitamin B6
  • 40% Phosphorus
  • 19% Potassium
  • 57% Selenium

So What Does This Mean?

It means that the vitamins and minerals this recipe has the most of can boost metabolism!  Most of the vitamins work to convert your food into energy.

Many of these can also help with nervous system function, immune system function, growth and development, and red blood cell formation!

Rock star recipe, huh?

If you decide not to use the crackers I recommend in the recipe, then please look at the ingredients of whatever butter crackers you do decide to buy! The top brands on this have hydrogenated oils and high fructose corn syrup, which are two of the most dangerous ingredients and have been linked to various illnesses, including heart attacks and diabetes. Many other countries have banned them!

Picking which butter crackers to use on this recipe will determine how healthy this recipe is. So pick wisely.

This Jalapeno Ranch Chicken is crispy on the outside and tender on the inside.  Marinating overnight gives it the juicy, tender flavor you crave.  Quick preparation the next day and dinner is on the table in no time!

  • 1.25 lbs Boneless Skinless Chicken Breasts
  • 1 cup Ranch Dressing (see below)
  • 3 Jalapenos (diced and seeded)
  • 25 Late July Butter Crackers (smashed to crumbs)

Ranch Dressing

Night Before Cooking (This gives the chicken its flavor and tenderness)

  1. Dice and seed Jalapenos
  2. Combine all ingredients for Ranch Dressing into medium bowl.  Stir with a spoon until completely mixed
  3. Trim chicken and cut into 6oz serving sizes
  4. Combine Ranch Dressing and all Jalapenos into medium storage bowl.  Mix thoroughly.
  5. Add chicken to the Ranch and Jalapeno mixture.  Place lid on storage bowl and shake until chicken is completely coated.
  6. Place in refrigerator until you are ready to cook the next day (12-24 hours)

Day of Cooking

  1. Preheat Oven 375 degrees
  2. Grease grill rack and place on an oven safe pan
  3. Place butter crackers into ziploc bag.  Smash until all are crumbs.
Aaron’s tip:  Go over it a few times with a rolling pin to get the crumbs even smaller
  4. Add marinated Chicken, Jalapeno, Ranch mixture to butter cracker bag.
  5. Close bag and shake until all are evenly coated
  6. Take coated chicken out of bag and place on roasting rack, allowing plenty of space in between each chicken breast
  7. Bake for 32 minutes
  8. Allow 5 minutes to cool and enjoy!

Double the ranch ingredients and set one cup of it aside to have Chicken Bacon Ranch Pizza or Buffalo Ranch Chicken Pasta tomorrow!
