    Cheddar Pork Tenderloin Tacos

    Description

    These Cheddar Pork Tacos are everything you have been missing in your life.  The best taste to satisfy even the pickiest of taste buds, while also being packed with nutrients to keep you full and feel great. Loaded with protein, and many vitamins and minerals, we chose shredded pork tenderloin for this recipe due to being a lean meat option without all the trans fats that other meats have.  And the best part is you can cook the meat in the slow cooker while you go do other things!


    Ingredients

    Scale

    1 lb Pork Tenderloin (with fat trimmed off)

    1 bowl Jalapeno Lover’s Cheese Dip (see recipe here)

    1 1/2 Cups  Salsa

    10 Whole Wheat Tortillas

    Seasoning

    2 Tsp Chili Powder

    1 Tsp Cilantro

    1 Tsp Basil

    3/4 Tsp Paprika

    3/4 Tsp Onion Powder

    1/2 Tsp Garlic Powder

    1/2 Tsp Black Pepper


    Instructions

    1. Stir all seasoning together and rub on tenderloin.
    2. Place tenderloin in slow cooker / Instant Pot and pour salsa over it.
    3. Set Slow Cooker / Instant Pot to low heat for 5  hours (If using IP, do not seal).
    4. Once done, take out to shred tenderloin and put back into Crock Pot to mix in with salsa.
    5. Leave to marinate while completing next steps.
    6. Preheat oven 350 degrees.
    7. While shredded tenderloin is marinating in salsa and oven is preheating, make the Jalapeno Lover’s Cheese Dip.
    8. Once oven is done preheating, place tortillas on taco holders and bake in oven for about 4-5 minutes (should be slightly crispy, but not cracking.)
    9. Once tortillas are done, take out of oven, load them with shredded tenderloin, a couple spoonfuls of cheese sauce, and your favorite toppings.
    10. Enjoy!

     

     

     

    Notes

    You can choose to make this without any of the seasonings.  I have made it both ways and liked it both ways because the cheese sauce and salsa has a lot of flavor on it’s own.
