    Apple Cinnamon Banana Bread

    This apple cinnamon banana bread is exactly what you need when you want some comfort food, but don’t want all the extra sugar that usually comes with banana bread.

    With added ingredients like apples, walnuts, and cinnamon, you are getting an extra boost in nutrients and fiber, so won’t slow you down like other dessert/breakfast recipes can.

    It is also dairy free and egg free, so anyone with those allergies won’t have to worry!

    This particular recipe has become a staple in my household, and even my neighbors raved about it when we brought some over to them!

    No refined flour or sugar, added protein and fiber, and good ingredients, this will be your new favorite breakfast or dessert.

    Walnuts are Our Friend

    Walnuts get such a bad rep for being high calorie.

    But if you have read ANYTHING else I have ever written, you know how extremely bogus I feel calorie counting is.  Luckily all the new research coming out is agreeing with me more and more.

    I dive into this deep in my Why You Should Stop Counting Calories article, so won’t go into it again right now.  But the summary of it is: It doesn’t matter the amount of calories something has, because there are way too many other factors in how your body absorbs calories.  We absorb calories differently from different foods.

    So you can eat something high calorie, like avocados and walnuts, and still lose a ton of weight!

    And walnuts are the perfect food.  They are the best nut you can consume, with almonds being a close second.  Which is why it was important for me to add these little bits of superfood in here!

    Walnuts are simply better because they have more antioxidants than other nuts do.  Want to repair your body?  Eat walnuts!

    They are also high in the “good fat” and low in the “bad fat”, which makes them do amazing things to your cholesterol levels.  They are high in Omega 3s, which can help brain health, and their nutrient profile is amazing at helping us feel full longer, so you don’t eat as much.

    Buy walnuts.  They are amazing.  I put them in my smoothies quite often.




    Buy Organic Nuts!

    When you buy nuts, this is one thing I will advocate that you buy organic.  Yes, it is more expensive.  However, so are medical bills.

    Nuts tend to absorb pesticides more so than anything else, so you are pretty much eating high amounts of pesticides if you don’t buy the organic versions.

    To give an example, I made homemade trail mix for myself and my parents when we went out of town for my brother’s wedding.

    My dad, who eats handfuls of nuts daily, couldn’t figure out why the nuts I used tasted much better than the ones he used.

    It was because mine were organic.  When I explained the pesticides, he kind of blew me off as a “yeah okay” type of reaction.

    Then a week later, when they went back home, my dad ate his versions again and said he could actually taste a chemically taste in the nuts, so I am probably right.

    Apple Cinnamon Banana Bread

    Description

    This apple cinnamon banana bread is exactly what you need when you want some comfort food, but don’t want all the extra sugar that usually comes with banana bread.

    With added ingredients like apples, walnuts, and cinnamon, you are getting an extra boost in nutrients and fiber, so won’t slow you down like other dessert/breakfast recipes can. This vegan friendly recipe is also dairy free and egg free, so anyone with those allergies won’t have to worry!


    Ingredients

    Scale

    5 ripe Bananas
    1 Apple
    1 cup Walnuts
    1 cup Applesauce (see notes)
    1 tbsp Cinnamon
    1/3 cup Monkfruit Sweetener
    1 cup Coconut Sugar
    1 tsp Baking Soda
    1 tsp Apple Cider Vinegar
    1 1/2 cups Whole Wheat Flour
    2 tbsp Flaxseeds
    6 tbsp Water
    1 scoop unflavored, unsweetened Protein Powder
    1 tsp Vanilla Extract


    Instructions

    1. Preheat oven 350 degrees
    2. Mix flaxseeds and water into small bowl and set to the side
    3. Mash Bananas into large bowl
    4. Cut up apple (remove core).  You can keep the skin on. Add to banana mixture
    5. Add rest of ingredients (including flaxseed mixture) except walnuts, and use a mixer until smooth
    6. Crush walnuts into smaller pieces and add to mixture.  Stir until well mixed.
    7. Pour into a 9 x 5 loaf pan
    8. Cook for 1 hour and 10 minutes.  Stick a toothpick or a fork in the middle to see if it is done.  If little to no mixture is on the tools, then it is ready to come out of the oven.  If not, then put it back in oven until no mixture shows up on toothpick.
    9. Let sit for about 15 minutes.
    10. Enjoy!

     

    Notes

    If you choose not to use the protein powder in this recipe, you can just add another 1/3 cup of almond or whole wheat flour.  I only chose the protein powder because I am plant based and wanted to add an extra boost of protein.

    You can make your own healthier applesauce by simply cutting an apple and removing the core, and sticking the remaining parts of the apple in a food processor or blender until smooth.
